Recipe: Easy Tortilla Soup

This is the perfect recipe for gloomy nights or rainy days. It’s easy prep, easy cook, and easy to enjoy!

You’ll need the following: 

2 cans Diced Tomatoes

Chicken Broth (you need about 5-6 cups, depending on how much room is left in the crock pot!)

1 can Corn – Drained

2 cans Chicken Chunks**

1 small can Diced Green Chilies

1 can Black Beans – Drained

1 teaspoon Garlic (we like Garlic okay!)

**I would prefer fresh rotisserie chicken, but we had these in the pantry that needed to be used up**

Not pictured:

1/2 Fresh Squeezed Lime Juice

1/3 cup Chopped Green Onions

1/3 cup Diced Green Peppers 

Cilantro to taste

1/2 White Onion chopped finely

Toppings:

Tortilla Chips

Avocado slices

Cheese

The easiest part to this.. combine all the ingredients above in a standard Crock Pot. TaDa! Easy as that. Takes 5-10 minutes to open all the cans, drain, cut any fresh vegetables and BOOM you’re close to a delicious soup.

Depending on when you want this ready to eat you can have it ready in 2 hours by putting it on high or 4 hours on medium.

I’ve made this before but it had been a while. I was nervous at first but after a few bites there was no contest. This soup was destroyed and delicious in my tummy!
